Anyone have a good butternut pumpkin soup recipe? Or even something with sweet potato?
I do this one , but use maple syrup instead of honey and add chives at the end
I do one similar to the Donna Hay one.
I sauté onion, garlic celery and carrot in olive oil and then add pumpkin that I've seasoned with salt, pepper and olive oil and roasted to the pot.
Cover with chicken stock and then simmer for 20-30 minutes or until everything's tender. Then I whizz it up. Sometimes I add some sour cream or creme fraiche and crispy bacon on the top.
This recipe is lovely too, if you want something a bit different.
