Default Soup soup and more soup!!!!

I do one similar to the Donna Hay one.
I sauté onion, garlic celery and carrot in olive oil and then add pumpkin that I've seasoned with salt, pepper and olive oil and roasted to the pot.
Cover with chicken stock and then simmer for 20-30 minutes or until everything's tender. Then I whizz it up. Sometimes I add some sour cream or creme fraiche and crispy bacon on the top.

This recipe is lovely too, if you want something a bit different.

The red lentil and pumpkin soup I posted on the first page is really nice. It was our dinner tonight.

Roughly chop a leek in a large saucepan/soup pot (take off green part and throw away) and fry in butter on low heat until soft but not brown. Add 4-6 peeled and chopped potatoes in small pieces. Add several litres of water with a few chicken stock cubes and a few vege stock cubes. Boil until the potatoes are quite soft.

Pour into a food processor, including stock and pulse until all is smooth. Add a small container of cream.
We use milk instead of cream and add cheese, bacon, corn and celery.

I do a simple one in the slow cooker with pumpkin, potato, onion, stock and some curry powder. The curry powder really gives it a lift. Easy and yummy.
