    Default Thai green curry recipe

    Ok, so I am having major preggo Thai green curry cravings atm. In days past I would have just dispatched DH to the local Thai takeaway for immediate relief (ahem), however as a newly single mum takeaway is somewhat outside my sucky new budget. Anyone got a killer green curry recipe handy....mine just doesn't seem to have the zip and zing of a proper one. Thanks in advance for helping make cranky pregnant lady somewhat less cranky๐Ÿ˜„

    Default Thai green curry recipe

    That was my absolute fave dish to eat when pregnant. Where I live there are no local thai takeaways so I always keep a few staples in the cupboard. I use a supermarket green curry paste and add coconut cream after frying off the paste, then chuck in handfuls of frozen prawns, and chopped veg (or frozen peas/beans if really rushed). Once cooked I take it off the stove and work on getting the flavours right, it's a bit tricky and we all have different tastes but add fish sauce, lime juice, brown sugar. Use small amounts at first then just add more of whatever is lacking. I find I like quite a lot of lime for extra tang!

    Thanks @HopefulK, you're totally right. It's just a matter of getting the balance right. I've experimented tonight and...yum! Cravings satisfied!
    Now to master curry puffs, roti and a really awesome green papaya salad.....
