    Default Healthy muffins receipe please !

    Hi everyone!

    I'm not much of a baker but I really want to try making healthy muffins (like ones with carrots,zuchini other veges in them ) for DD.
    She doest eat much sweets (no choclates/lollies ) but loves cupcakes/cakes and muffins.

    So I thought if I can make healthy ones every now and than atleast I wont feel guilty that all she is getting from store bought cakes etc is suger!

    Like I said I'm not much of a baker so simple, straight forward receipes would be appreciated !!

    Not sure if you could add veggies to these but they are very healthy.

    They are a little bland as there's no sugar but you could add sugar or stevia to it..,.

    Have you tried googling? Or purchasing books (excuse to go shopping) ha ha . I'll be following for some ideas.

    These are awesome, I tend to put spinach and stuff in there as well. DD and all her friends love them, they freeze well too. I tend to make them as mini muffins

    Ham, Cheese and zucchini muffins

    80g butter, melted
    1 egg
    1 cup buttermilk
    2/3 cup finely chopped ham
    1 cup coarsely grated cheese
    1/4 cup finely chopped fresh chives
    1 medium zucchini grated
    2 cups self raising flour
    1/2 teaspoon salt

    Preheat oven to 180, grease muffin tin
    Whisk butter, egg and buttermilk in a large bowl. Stir in ham, cheese and zucchini. Add sifted flour and salt
    Put into muffin tray and bake. Wait 5 min before removing from tray

    I did google them but I thought I'd first ask for the tried and tested receipes from the hubbers rather than trying the online ones

    It isnt a savour recipe and it does contain sugar ( i always swap for stevia or similar)... Ill type the recipe up later when im on the computer but I make cupcakes often and load them up with fruit. Usually divide the batter in two and make half kids ones and half adult ones. So the recipe calls for approx 1 cup of fruit of your choice. So 1/2 a cup of raspberries for kids and 1/2 a cup each of rasberries and white chocolate chunks for adults.

    Ive never had a batch fail and ive tried
    - banana
    -all types of berries
    -apple and cinnamon
    -peanut butter and dried fruit
    - pear
    -peaches or other stone fruit
    Ect

    I would probably avoid melons and grapes though ...
