We had a Christmas lunch with my mothers group today and one of the girls made a Mexican salad that was amazing! So easy, too!
A layer of shredded lettuce, a layer of diced tomatoes, a layer of drained kidney or refried beans, a layer of grated cheese, a layer of equal parts Mayo & sour cream, then topped with a layer of crushed corn chips. It was delicious, and everyone loved it.
She left the leftovers here so we'll be having it with dinner tonight too! 😉
Nope don't need to cook broccoli, @melimum. ImageUploadedByThe Bub Hub1420099085.449894.jpg just dice broccoli finely like my pic and add the stalk finely diced to for some added crunch! It is a lovely fresh salad. And don't go overboard with the mayo, just enough to coat it. Hope you like it!
