    Some great ideas. I do a roasted vegetable salad. Red capsicum, red onion, zucchini, mushrooms all cubed ans oven roasted with olive oil until golden brown ans sweet. Leave to cool, mix with rocket, olives and some sweet little grape tomatoes and drizzle with olive oil and balsamic

    I need a potato salad recipe please.... i have only ever made it 2x a both times it wasnt nice..... any suggestions most welcome

    I'm not a huge mayo fan so instead for potato salad I use half sour cream and half greek yoghurt as the dressing. On occasion I have just used yoghurt. Season with salt to taste and add whatever herbs you like. Chives, dill or parsley work well or you could just add some spring onion to the top. Sometimes I add mustard or capers to the dressing as well.

    I have a potato salad recipe but I am pretty vague with quantities so I apologise for that in advance.

    8 Medium potatoes
    1 large onion
    8 shortcut bacon slices
    6 boiled eggs
    mayo
    French dressing

    Cut spuds into 8ths and boil till cooked but not mushy
    Dice bacon and onion and fry together till bacon is crispy. It helps to give the bacon a head start so onion is not crispy. You can also add garlic to this step but when I am pregnant garlic is not my friend so its out.
    mix mayo and French dressing into a small bowl or jug till it tastes good then pour over top. You want enough to coat everything.
    Cut boiled eggs into 8ths and stir through
    You can also add sliced spring onions at the end if you like

    I do a couple of different ones.

    1. I peel and dice potatoes in about a 2cm dice and cook in salted water until just tender then drain and cool. I add cooked diced bacon, sliced spring onions and tinned corn kernels and then I season it all with salt and pepper and add a touch of olive oil and then use ETA Potato Salad dressing - that stuff is the bomb! Tangy and just yum! See here:

    You could add some quatered hard boiled egg as well if you like.

    The other is new potatoes with skin on and halved (cooked until just tender in salted water) and then cooled and I add a couple of crushed garlic cloves, lots of chopped fresh parsley and olive oil and balsamic vinegar.

    I don't like creamy potato salads so I do a Lebanese one : just mix all in a big bowl!

    4 big potatoes boiled and cubed
    1/2 cup olive oil
    1/2 cup lemon juice
    1/2 clove crushed garlic
    1/4 bunch chopped parsley
    4 chopped shallots
    Sea salt and freshly cracked black pepper
