    On mynewroots there's a recipe for wild rice, borlotti bean and roasted carrot (I think?) salad with an amazing dressing. I love it.

    Beetroot, orange, hazelnut, fetta, mint.

    Could add some plainer green leaves to beef it up a bit but is lovely on its on too!

    We had a Christmas lunch with my mothers group today and one of the girls made a Mexican salad that was amazing! So easy, too!
    A layer of shredded lettuce, a layer of diced tomatoes, a layer of drained kidney or refried beans, a layer of grated cheese, a layer of equal parts Mayo & sour cream, then topped with a layer of crushed corn chips. It was delicious, and everyone loved it.
    She left the leftovers here so we'll be having it with dinner tonight too! 😉

    I just made this salad for dinner! So quick and easy (I have a phobia of kitchens lol!) DF, DSD 13 and DSS 10 ate it happily and requested more yay! 😛
