    Default What to do with chicken mince?

    Mother dearest palmed off some chicken mince to me (2x500gr) what can I make that's easy, but isn't rissoles?

    You could make oven baked chicken nuggets.
    Chicken mince
    2 tsp powdered chick stock.
    Diced onion
    Grated carrot and zucchini
    Half cup of breadcrumbs
    1 beaten egg.
    1 cup of shredded tasty cheese
    Mix all together and roll into small balls.
    Bake at 180 deg for about 20 mins or until golden brown.

    Ds and dh love them!

    Chicken risotto - google recipes for kids and there is one that uses chicken mince - it looks pretty plain but tastes pretty good.

    Apricot chicken

    Just add a can of apricot nectar and a can of chopped up apricot pieces, some onion and carrot and a packet of french onion soup mix. Easiest and yummiest apricot chicken I've had.

    Stir fry or curry. I've made a stirfry with peanut oil, sesame oil, soy sauce, garlic & ginger and assorted vegies.

    And also red thai curry - curry paste & coconut cream with assorted vegies.

    Both served with rice. Yum.
