    Default Coconut Milk Question.....

    I am making pumpkin soup today..... is coconut milk a viable dairy free option to add for a bit of creaminess? or will the coconut flavour be too overpowering?

    Thoughts???

    Coconut goes quite well with pumpkin, so I think it would be fine. My mum makes a pumpkin soup with a little bit of a Thai curry paste in it, and coconut milk, quite delicious

    It's delicious if you add a bit of curry powder at the beginning when you sauté the onions... Then coconut milk near the end

    I did it.... added coconut milk as I whizzed it through the processor... yummo! Thanks ladies!!
