    I wouldnt drop any less than 1200 as that is quite minimal as it is. The non fast days are meant to be "normal" calorie intake. This apparently stops the body from going into starvation mode and holding onto everything. Perhaps you arent actually eating enough on the non fast days.

    Maybe try 4:3 as opposed to 5:2. Would be easier than sticking to no more than 1000 cals and calorie counting on those days.

    I think it's important not to get too caught up with the numbers as it's unrealistic to expect a loss every single week. So many things impact on weight fluctuations. The hotter weather causes water retention and bloating, AF can up your weight that week, you might be losing centimeters as opposed to numbers.
    Maybe weigh yourself less frequently if the numbers are a bit off putting.

    Just try not to get too discouraged, stick with it, and results will happen.
