    Default Lactation Cookies - any alternative to butter?

    The recipe I have says to use 1 cup of butter or coconut oil - that seems like loads of butter so I had a quick google for coconut oil and it's really expensive! What else can I use?

    Margarine.

    Are you wanting to use coconut oil for the health benefits? Because a good butter has good fats, fats your body needs in small amounts.

    And the recipe yields an awful lot too, so it's not like all that oil is going into a small amount- it's widely dispersed.

    Ok cool, I haven't made them before so I don't really know how much it'll make. Also I thought maybe the coconut oil would make them a little healthier!

    Coconut oil is super good for you. I'd do it or butter for sure. I wouldn't use margarine.

    I have always used butter not margarine for my recipe. I do also have coconut oil in the house which I bought online for my nipples - (sorry TMI) while BF. I never thought of using it. Great idea. The recipe I have, makes quite a lot of cookies. There is also quite a bit of dry ingredients so I never really worried about the amount of butter. Guess it's what makes them yummy!

    My friend substitutes Greek yoghurt (the real stuff not Greek style) for butter and her stuff tastes great.

    I found coconut oil in Coles on special so I'll give it a go. Baking day tomorrow!

    No point eating them before birth, won't do anything but taste nice I used to use the recipe on BH, try a search for lactation cookies
