    Default Salmon Inspiration please?

    I normally grill and serve with salad.

    Anyone have something a little more exciting for me?

    Dd has asked for salmon and DH loves salmon, me not so much but I'd love to make something nice tonight👍

    Recipes please?

    I make an awesome salmon and rice "bake"

    2 cups boiled rice
    1 tin salmon
    1 egg
    2 cups grated cheese
    Lemon juice


    Press the cooked boiled rice into the bottom of a baking dish
    Mix salmon, egg, half the cheese and lemon juice to taste, in a bowl
    Press the mixture onto the rice
    Cover in remainder of cheese
    Microwave for about 12 mins

    Serve with lemon juice... Absolutely YUM

    Nigella has a great glaze for salmon. Cook the salmon then remove from the pan. Add equal parts mirin and soy sauce to that pan and reduce to desired thickness. Everyone loves this and I serve with mash potato and green beans.

    A couple I like:
    • crumbing my salmon fillets in dukkah and then searing and serving with stir-fried veggies (mushrooms, cabbage, snow peas)
    • plain seared fillets served with mashed pumpkin and asparagus
    • Jamie Oliver's green tea salmon, coconut rice & miso greens (from Jamie's 15-Minute Meals)
    • CSIRO Healthy Heart Cookbook has a delicious salmon recipe - seared fillets served with like a braise lentils, tomatoes, spinach, lemon zest, red wine vinegar

    Can you use tuna for this? I like this one for the toddler shed love it
