We had quinoa last night. I cooked up about a quarter cup quinoa with 3/4 cup water. Chopped some beetroot and pumpkin into 1cm cubes, 1/4 cup beans and corn mix and fried it all off until it started to brown a bit. Added half an oxo chicken stock cube and about half a cup of water and stirred through until the stock cube dissolved. Added quinoa and stirred through. It was served as a side dish warm salad type thing. I made it up and it tasted OK.

Moroccan paste works well with it too.

Quinoa and kale salad with creamy tahini dressing. Made this a couple of nights ago and it was super tasty! Had with pan fried chicken breast.

Cooked 3/4 cup quinoa in the rice cooker then chucked in chopped kale close to the end so the steam wilted it down just a little bit then stirred through to combine.
    Tahini dressing:
    1/4 cup tahini
    2-3 tbsp olive oil
Juice and zest of a lemon
    1-2 cloves of garlic
    1 tsp sugar
    Salt

Whisk dressing ingredients together. The tahini that I had was on the thicker side so I added a splash of boiling water to thin it out to a smoother consistency.

    Modified from this recipe: http://foodess.com/2013/03/shredded-...hini-dressing/
