    My kids leftovers ie crusts, brown part of avocado, bruised part of fruit or anything left uneaten.

    Mainly stirfrys or quiche always a cooked lunch I make in bulk and freeze in portions

    We are rarely home for lunch but our easiest/quickest /healthiest lunches are:

    Pita pizzas - wholemeal pita bread with mozzarella, spinach, tomato and feta

    Toasted Mountain bread wraps - usually falafel , cheese and tabouli

    Egg pancake ( omelette ) 2 eggs with whatever is in fridge - usually tomatoes, feta and basil , just cook in a mini fry pan

    Boring leftovers from the night before generally or I plan the trip to the shops at lunchtime too.
    Failing that a toastie of some sort or toast.
    Not very creative with lunch really. It's more just a case of filling a hole until dinner.

    I have whatever I can find, usually a wrap or toasted sandwich.

    Today though I've got leftover mashed potato so we will be having fish cakes, yum yum
