    Default Chicken drumstick recipes

    So chicken drumsticks are cheap this week, so what are your best recipes/ideas for using them?

    Oven baked with garlic and herbs with roast vegies.
    Marinated in honey, soy and garlic and baked. Served with Asian greens and rice.
    Chicken Cacciatore - can give you my recipe if you like.
    Southern style fried chicken with coleslaw.
    Creamy chicken and mushroom casserole.

    Flour, sumac, salt and pepper. Coat drumsticks in egg yolk then the mixture and oven bake. Tastes like KFC. Kids love it. Can also put chia in the mixture.

    Cornflake crumbed chicken - I use the little drumettes but you could do it with big ones - chuck in a food processor: 2 cups of cornflakes ( I use the freedom foods one) 1 cup grated tasty cheese, handful fresh baby spinach, 1 clove of garlic , salt and pepper and a tablespoon of chia seeds - crumb with a normal egg wash and bake in 190 oven until golden, spray with olive oil first ( about 30 mins )

    I don't eat drumsticks myself but made some for my daughter last week and they were such a hit! I coated them in olive oil then sprinkled with paprika. Cooked at 180 degrees for 45 minutes covered with foil, then a further 30 minutes uncovered. They were so tender and yummy and I hate brown chicken!

    I just coat mine in honey and dry mustard powder and bake @ 180 for 35mins

    No probs

    Chicken Cacciatore
    1kg of chicken drumsticks (or pieces)
    1 onion shopped
    2-3 cloves of garlic crushed
    1 red capsicum chopped
    250g mushrooms sliced
    1/2 cup of dry white wine (can use water)
    1/2 cup of chicken stock (can use water)
    1 tin diced tomatoes
    Herbs (fresh or dry) parsley, oregano, basil
    1 cup of olives (whatever sort you like or you can omit altogether if you aren't a fan)

    Put a glug of olive oil into a large pot and brown your chicken pieces on all sides then pop on a plate.
    Add the onion, garlic and capsicum to the pot and saute until softened (about five minutes.
    Put the chicken back in and add the wine and let that cook off for a few minutes.
    Add the stock, tinned tomatoes, herbs, salt and pepper and turn to a low heat.
    Cover and simmer for about an hour and a half, then remove the lid and simmer for another 30 minutes or until the sauce has thickened a bit.
