    Ok I may or may not have had a little too much wine but I'm adding this photo today. Not because I think it's great, it's not, but because I dumped the first attempt (biscuit) and I'm a little bit happy that I didn't give up and run out to buy one.
    Pretty sure this thing tastes awful hahaha, but it's my first ever sponge.
    Tell you one thing though, I've been mulling over a Bellini for about a month. The disaster I had today has just sealed the deal.

    Please excuse the butter cream, I wasn't going for perfection. Edible was the only target I was aiming for.
    The birthday boy decorated it with chocolate.
