300 g Self Raising Flour
90 g Butter, , cut into chunks
150 g milk
60 g Butter
40 g Soft brown sugar
1 tsp cinnamon
150 g white sugar
1 tbsp boiling water
Preheat oven 200
Mix butter and flour until mixture looks like bread crumbs (rubbing butting into flour)
Gradually add milk and mix until a dough forms.
Turn out on a floured surface and knead until dough is nice and rollable
Roll out so dough is around 5mm thick
Mix all filling ingredients until its nice and creamy and spread over dough.
Roll, cut, bake for 10-12 mins
Make sugary icing and drizzle over the top.
Blue pikelets for this mornings breakfast/morning tea. Last week I also baked 2 loaves of banana bread, cinnamon tea cake, 70 Anzac biscuits and carrot cake for DS1'S cake stall at school.
