    Lemon/Lime Cheesecake.

    I also made the lime curd from scratch this time as we had an oversupply of limes & eggs!!

    I am not the avid baker at all (much to DPs dismay hehe) but I do have a go every now and then. These were for DS's 4th birthday on Tuesday for daycare. I first tried to make white choc cupcakes but in the midst of DS wanting to 'help' I accidently put waaaaay too much choc in the mix and they werent going to set at all. 30mins and they were a sloppy mess so I reverted back to just vanilla sponge cupcakes with white choch ganache (sp?) and decorated with those icing pens.

    OMG I had RSI in my hand after using those pens! Im well aware they look like a 'nailed it' outcome, my vision wasnt quite on par with my abilities.... DS was absolutely STOKED with them anyway so that is all that matters.

    They're made in a slice tin, have rum & ground walnuts & grated dark chocolate in them. Then you use a cookie cutter to make the moons. My DH's Czech grandfather used to make them. They're called cakes but are more like slice consistency. It was a lovely treat for DH's family who hadn't had them since his grandfather died.

    Oh you reminded me of when I decided to make cupcakes for DS1s class this year cos I thought it'd be less time consuming than a cake. I was wrong!! They are a bit dodgy but he loved them.
