I do love baking, I haven't been doing much of late but look forward to getting back into it.

Very easy tart that I've made several times now.

It's a recipe i made up along the way. They are just right sweetness for the kids and i but not dh. When he had some his comment was "this doesn't have any sugar in it"!

    Preheat oven to 160C

    Ingredients:

    Part 1:
    1cup plain flour
    2 tsp baking powder
    2 tbsp chia seed
    1 apple peeled and chopped

    Part 2:
    6 medjool dates pitted
    Half cup almonds
    Half cup oats
    1 tbsp sunflower seeds (optional)
    1tbsp pumpkin seed (optional)

    Part 3:
    2 handful baby spinach
    1/4 cup oil
    Half cup milk
    1 egg
    1 ripe banana
    1 tsp vanilla extract

    Method:

Mix ingredients in part 1 in a bowl.

Put ingredients in part 2 in blender and pulse to get a crumb.
    Add to part 1 ingredients.

Put part 3 ingredients to empty blender and blend really well.
Add to bowl of dry ingredients
Mix until combined. If looks too dry add bit more milk. If too wet add bit of flour.

Put into lined tins and bake about half an hour.

Oh that citrus tart looks so good!

This is the recipe I used
http://www.taste.com.au/recipes/5990...berry+bakewell but instead of bought shortcrust pastry I did a sweet almond pastry and added toasted slivered almonds on the top.

Almond Pastry (it's a TMX recipe but you could make it in a food processor)
    ALMOND PASTRY - from EDC

    30g sugar
    30g blanched almonds
    210g plain flour
130g hard butter cut into small chunks
    1/2 tspn mixed spice
    salt to taste
    1 medium egg yolk
3-4 tsp water or orange juice

Place sugar into TM bowl and pulverise for 3 seconds on speed 9. Set aside.
Put almonds in TM bowl and mill for a few seconds on speed 8.
Add flour, butter, sugar, spice and salt and mix for about 10 seconds on speed 6 until mixture resembles breadcrumbs.
Set dial to closed lid position.
Add egg yolk and water/orange juice and mix on interval speed for 10-20 seconds to form dough.
Turn mixture onto floured board and knead lightly. Put in refrigerator for about 15 minutes before rolling out and baking at 200oC.
This recipe can be used for sweet tarts, fruit mince pies etc.
