    I suppose whatever meal is left in freezer from when I was away or take out.

    Spread a thin layer of mince in the bottom of a casserole dish. Add a layer of tortillas, followed by a layer of cheese. Repeat as many layers as you want (meat, tortilla, cheese). Finish with a layer a mince topped with cheese.

    Bake in over for 20-30 minutes or until cheese is melted and golden. Serve with a dollop of sour cream and guacamole.

    mmm, I so feel like haloumi now.

    We're having something that involves marinated chicken wings & roast pumpkin. I'm thinking:
    Spiced pearl barley with roast pumpkin & baby spinach; chicken wings on top.
