    I have a lemon tree with a gazillion lemons. I've been making lemon and yoghurt muffins and yummy lemon delicious pudding.

    The zest is the bet bit, I reckon. How about a batch of gremolata, or salsa verde, which you can freeze- they go on everything- all types of cooked fish, chicken, salad, veges, and then you can use the juice for other things.

    I just made a big batch of lemon curd then used that to make tarts and frozen yoghurt, and on pikelets. Yum!

    Lemon self-saucing pudding (mmmmmmm with cream or ice-cream) one of my fave winter desserts! Or lemon coconut slice (also delish!).

    Also you can freeze the juice in ice-cube trays and use it when you need it (eg chuck it on some fish or chicken etc) saves having huge batches frozen that you can't use all at once. I think preserved lemons you can use in a lot of recipes (eg with baked fish/chicken or in salads) to add a bit of tang/something different to the dish.

    This is the recipe I use, super easy & delicious. Takes a while to whisk until it's thick, I usually make it in the evening & have a glass of wine while I'm whisking 😊
    The related frozen yoghurt recipe is awesome too.
