    I've found that it turns after about a week and starts to get vinegar-y. I only know this as I cook with wine often and couldn't finish off the bottle while pregnant, obviously.

    ....just quietly I always find at least one recipe a week that calls for wine so I have legitimate excuse to buy a bottle, and then I can't let the rest go to waste!
