My absolute favourite is a tomato risotto. I don't really have exact measurements.
I start by melting butter in a pot and put chicken stock in another pan. When the bitter is melted I poor in arborio rice. Cook till the rice is well coated.
I think add half a cup of stock at a time. In between stirring I cut up over ripe tomatoes. When most of the stock is added I add the tomatoes (skin, flesh and juice).
I cook till the rice is cooked then add about 1/2 cup to 3/4 cup of grated parmesan cheese and a little pepper. If I use salt free chicken stock I will also add some stock.
I often have of as a vegetarian risotto but sometimes I add some cooked salami or crispy pancetta crumbed on top.
