    Default Can't remember what veggies in panang curry

    Haven't made many curries since having kids and even though we used to cook this one I have no idea what veggies besides bok choy and carrot that we used to put into it.

    Any ideas?

    My mum makes this all the time (she's Thai) and she just puts whatever veg she has on hand in it. I've seen her make it with green beans, potato, carrot, peas, zucchini, any of the Asian greens. I don't know how authentic it is but it always tastes awesome

    I use carrots, zucchinis, peas and sweet potato! The sweet potato makes a curry imo. I add it first so it collapses and thickens the sauce but I also add extra afterward and cook until just tender.

    Excellent! I have a sweet potato left over from last week's meals, beans in the freezer and bought 5 zucchinis today which I can steal one from.
