I ended up doing apricot chicken tonight. It was a hit with my 3 kids and my husband loved it as well.
I did 4 chicken thighs diced, 6 baby potatoes chopped into quarters, 3 small carrots, 4 squash diced and added sliced frozen beans about 10 mins before serving. I put in one tin of apricot nectar, 2 packets French onion soup, generous sprinkle of curry powder and a tbsp of massell chicken stock and also added water. Enough left over for my husband's lunch tomorrow.
