    Spaghetti Bolognese... Which has now turned into lasagne with home made pasta sheets & béchamel sauce... Can't wait! Lots of hidden veg too (carrot, zucchini & pumpkin) might serve some garlic bread on the side.

    Chicken enchiladas with brown rice and salad. Never made them before, hope they are yum. They smell delicious!

    We use green lentils, I like them best for bolognese. Personally I don't think it would be noticeable if you were still using half meat! Just pulse them once they're cooked. I do that anyway because I think it's works better with pasta
