Default Can coconut oil be used for shallow frying?

I'm making some vegetable fritters and I'm frying them in coconut oil but they're sticking quite badly. Should coconut oil not be used for greasing / stopping things sticking?

I added a bit more for the next batch and it worked, I think they were just absorbing it pretty quickly, thank you :-)

Coconut oil is also fantastic for lining cake tins and gives chocolate cake an amazing taste.

My sister made pina colada chicken nuggest by soaking the chicken in pineapple juice, then shallow frying in coconut oil. Tasted delicious
