Would she eat chicken sticks? With a marinade? Home made nuggets?
Seeing as its only 2 nights, what about not worrying about vegies etc and do basic easy things. Toasted ham and cheese sandwich, cereal, baked beans, ommelette is a great idea!

She would eat some chicken strips or something like that. I was just hoping to smuggle some vegetables into her.

This might be a stupid question but does the hotel have any cooking facilities on it's premises at all? If so, couldn't you just ask at reception if they could heat something up for you?
Could you not take an electric frypan/crockpot thing with you and use it in the room?
I'd also check with the hotel if they have microwaves so you can reheat the food? Not sure what you have tried or how old she is but maybe on holidays its a good excuse to tell her she needs to try other things and not give her her usual food?
