I think if I have time I might make some little muffins the night before we go - that's a great idea. I've got a bran/blueberry recipe the kids love and mini muffin trays. That's pretty portable without too much mess or packaging

Individual packets of rice crackers ( you could zip loc them). Don't forget drinks. You will have to buy them airside. We brought the child's empty sippy cup and filled it with bbottled water we bought airside. We also had individual packets of vege chips and sultanas but you sound like you want healthier stuff than that!
DD had been to the States several times and never eats the "kids" meals provided. They're horrible. Along with the snacks mentioned above, I'd pack some sandwiches too. I always pack what I think is too much food and it always gets eaten. If you have any left over you can use it as snacks at your am destination instead of running out to find something (except fruit). And if you have a small bottle of water for the kids, security doesn't make you dump it. Good luck!
