Here it is;
Line tin with baking paper, overhang the edges.
Base- 1 cup self raising flour, 1 cup desiccated coconut, 1/4 c brown sugar, 1/4c white sugar, 125g melted butter. Combine and press into tin, bake at 160 (fan forced) for 15 mins.
Topping- 375g softened cream cheese, 1/4c sugar, 1/2tsp vanilla, 3 eggs, 1 pkt loosely crushed Oreos. Beat cream cheese, sugar, vanilla until smooth. Add eggs one at a time. Add crushed Oreos. Pour on top of slightly cooled base and bake for 20-25mins. Allow to cool, lift out of tin using baking paper handles. Slice off edges (they're for the chef) and cut into squares.
This recipe is very forgiving. I've changed quantities, substituted some cream cheese for condensed milk and it's always turned out yummy. I usually double the recipe (cooked in a large Pyrex baking pan) but when I bake it like this I knock the temp down to 150 degrees and put a pan of water in the bottom of the oven to keep the slice moist. Enjoy. It's very easy to make and very yummy.
