    Default Christmas lunch / dinner ideas!

    I just can't wait to eat my weight in food on Christmas Day! It's just going to be us 3 this year for our first family Christmas and I want to make it special with delicious food. I don't know about you but I want some inspiration!

    What will you be making?

    I was thinking a ham, salad, raw fish in coconut cream, pesto and pinenut pasta salad and maybe a potato bake!

    I'm doing a potato bake and a whole salmon with lemon and dill. Taking them to mums house for lunch where we will BBQ the salmon.

    I also want to do a range of sweets like rum balls, biscuits, fudge etc.

    I can't wait either!

    I'm doing big platters of smoked salmon, another one of oysters and a huge one of prawns. Lots of fresh bread, lemon, capers etc etc

    And a pavlova for dessert

    Anyone have any ideas for fancy salads? I want to do some really nice salads as side dishes instead of roast veggies..

    Salads:

    Roast pumpkin salad

    Cubed Roast pumpkin (brushed with maple syrup while roasting ) shaved fennel, rocket, red onion, goats cheese and sprinkle with either pine nuts or walnuts - dress with lemon juice , olive oil and caramalised balsamic vinegar

    Prawn Mango Salad

    Halve fresh cooked prawns, cubed mango, cubed avocado, finely chopped red onion, fresh coriander and mix , place in a bowl or platter covered with iceberg lettuce leaves dress with a mix of olive oil, lime juice and honey ( add chopped fresh chilli if you like some heat)


    Fattoush salad

    Cook 2 pita bread rounds in oven until crisp and break into small pieces then add, diced cucumbers, red onion, tomato, radish, green and red capsicum , chopped spring onions and fresh mint and parsley - sprinkle with sumac and dress with olive oil and lemon juice

    there is 5 of us this year so we are having baked ham, prawns, potato salad, green salad and a fruit and cheese platter .. desert is a pavalova which I will make plus im going to make rocky road and milo slice

    These look yum, Donna Hay has a yummy maple grazed prochettio and iceberg lettuce salad. That could be yummy too!
