Default shortbread cookie which butter salted or unsalted?

    Hi all,

So I made shortbread cookies using unsalted butter this year and I cant remember if I used salted butter last year?

Which do you use, salted or unsalted?

My recipe doesnt specify which butter and uses rice flour so im thinking maybe salted might be best?? I need to make another batch so wanted to ask you guys first.

    TIA

I never have the right ingredients handy so recently used reduce salt margarine instead of butter.

My trick with shortbread is to use half the amount of butter stated in the recipe and substitute margarine for the other half - you still get that lovely rich buttery flavour, but it's not so crumbly

I use salted butter for mine.

I always use salted for shortbread, I think it tastes better in my opinion.

(I made some of the Rich Shortbread from the WW Beautiful Biscuits book, omg, divine!)

From a bakers perspective, good quality salted butter is best in ALL baking as the seasoning will be perfectly balanced. Good brands are norco, allowrie, and of course lurpak etc but then it gets a bit exxy! Woolworths select Tasmanian butter in the silver packet is good too.

Cheap butter (home brand styles are saltier to hide the taste of lesser grade cream and can make the final product over seasoned.
