    Default What do make with these ingredients??

    I'm starting to make dinner but no idea what to do with what I have.. let me know please if u know what I can make.
    I have
    Pumpkin
    Fresh mint leaves
    Fresh coriander
    Carrots
    Red onion
    Pasta shells

    I was thinking pumpkin pasta with corriander mint and garlic through it and looked for a recipe and there is no such thing ! I want it to taste good...

    Have you got a bit of balsamic vinegar?? Any kind of cheese??

    hmmm i wouldn't think mint and coriander in a pasta dish? Though you could make a pesto with the corriander, some garlic and some olive oil, roast the pumpkin and carrots with the red onion and add both to some pasta?

    I'd make a roasted veggie pasta salad. I'd leave the red onion raw....my mouth is watering!

    Yep I have parmisan and normal grated cheese.. no balsamic I have white wine vinegar..

    Roast Vege sounds good but I think it would be very plain just on pasta?

    With a white wine, parm dressing and those fresh herbs - wouldn't be plain. Do you have anything in the pantry? Sundried toms or capers etc?
