    I have heaps of bananas to use up!

    Does anyone have any tried & tested banana cake / bread / muffin recipes?

    Would particularly love a nice moist banana muffin recipe

    I have about 20 over ripened bananas in the freezer at the moment so am looking for a really good banana bread recipe too!!

    I had a delicious banana bread recipe but I lost it!!! And have been disappointed with the two Ive since tried.

    I made lovely moist banana muffins yesterday, a bit of a throw together recipe but I'll try and remember it:
    220g self raising flour
    1/2 cup brown sugar mixed together

    1/2 cup vege oil
    1/2 cup milk
    1/2 cup sour cream
    1 tsp vanilla
    1 egg
    1 and 1/2 large bananas mashed
    All mixed together

    Then mix wet ingredients into dry.
    Bake in moderate oven, 20-25 mins large muffins, 12-15 mini muffins.

    I don't eat Bananas, but everyone who tries the banana bread I cook loves it-it's Bill Grangers banana and choc chip loaf. If you google you'll find the recipe
