Had bacon, sweet potato and potato. Diced the veggies. Fried the bacon and cut into strips. Added shredded roast chicken and grated cheese. 180 for 30 minutes. Delicious.

    That does sound yummy!

We got a new fridge yesterday ... so I cleaned out the old chest freezer and found 3 packets of open oven chips. So chicken schnitzels, steamed veg and oven chips tonight.

i had mango, chicken thigh fillets, capsicum and lettuce. Found some mango chutney in the back of the fridge. Roasted the chicken 180 degrees 30 minutes. My 2 year old is even eating it as we speak!

Im doing the pantry challenge again this week.

I have 4 sausages to use tonight, we had snags in bread yesterday so don't really want that again.. but don't really want to make the sausage casserole I had planned as it is too hot to use the oven! Hmmm

Don't have much meat this week: 500gm beef mince - which I will split in 2. One half mixed with lentils for lasagne, one half mixed with beans for tacos.
1 chicken breast - not sure what to do with this yet.
Couple of steaks - dh will have these, kids and I can have leftovers on that night and chicken nuggets the other night.

Sausage pasta? I use a recipe that needs pasta, onion, either a jar of pasta sauce OR soup/passata/can of tomatoes+1 beef cube+water, 1/2 cup of cream, I like to add peas and beans and top with a little grated cheese.

The stay at home mum website has a choc coconut muffin recipe, it says to use coconut cream but I used coconut milk the other day at it still tasted good to me .
There is also a Dairy free chocolate cake on there that uses 800ml of coconut milk.
