I am a hoarder...so I am going to accept, but I'm going to see how many weeks I can go living on 21!! I need to downsize to go away for summer so will be more inspiration! I have a bad habit of adding to the trolley to get it over 300 so I don't have to pay delivery!!
I think this challenge will also help address overeating. I'm sure we all eat more than we should including me. Portion control will help with stretching meals I reckon.
Ok need mince ideas as I have loads of mince in the freezer. I can't wait to start this challenge should be interesting my freezer and pantry need cleaning out might do that today and take a stoke take
Savoury mince (just chopped veg, mince, stock, onion - you can use it as pie filling, or with rice or pasta etc)
Homemade burgers or rissoles (I add dried French onion soup mix to the mince for burger patties, so yum!)
Beef sausage rolls
Meatballs in pasata with pasta of mashed potato
Lasagna or pasta bake
Burritos or tacos

I had a little bit and used it up with a cottage pie.
Okay today's menu.
Breakfast - Poached egg on grain toast with cup of tea
Lunch - Vego mountain bread nachos
Dinner - salmon with steamed veg (pumpkin, carrot, zucchini).
Snacks - protein shake, chobani yoghurt
fry your mince with chicken noodle soup packet sprinkled over top (the thin packets)
boil some rice as needed
Mix the whole lot together in one large pan, slop it on the plate & dig in.
You can add other things for flavour and experiment with vegies. Half a cabbage can be used, another time I cut potatoe into cubes, fried them with some curry powder then added the rest of the vegies mince and rice.
