    Salad- quinoa, cucumber, red onion, feta, baby tomatoes, lemon oil or olive oil with lemon juice. Salt & pepper. I don't really measure I just add.

    This is pretty much what I do minus the feta. Occasionally I add Moroccan paste to it(the stuff you buy in the tube from Coles etc), or fresh herbs like basil or parsley etc. ever now and then I will cut a lemon into wedges and throw it on the frying pan to brown off. That gives a nice flavour squeezed over the quinoa.

    This is good comfort food!

    Pizza Quinoa casserole - good for a cold night.

    1 cup of uncooked quinoa cooked in 2 cups of water or about 3½ C cooked quinoa
    12 tbsptomato paste
    3-4 large cloves garlic minced
    ½ small onion, finely chopped
    2 tbsp water
    2 tbsp good quality extra virgin olive oil
    1 tsp oregano
    ½ tsp fennel seed
    1 tsp marjoram
    1 tsp basil
    1 tbsp dried parsley
    ¼ tsp sugar
    ¾ – 1 tsp sea salt
    dash black pepper
    ½ cup mozzarella cheese, to top

    Rinse quinoa well and combine with water in a small pot over high heat. Bring to a boil, cover and turn down to low and simmer for 15 minutes until all the liquid is absorbed, the quinoa is tender and completely cooked. Remove from the heat and leave covered in the pot for 5 minutes while assembling other ingredients.

    Preheat oven to 180 degrees. Grease a larger casserole dish.

    In a small bowl, combine the tomato paste with the garlic and onion, water and olive oil. Mix well. Add all the seasonings. Mix well before adding the quinoa. Once the mixture is completely mixed, taste for seasonings and add more salt as needed. Put in dish and sprinkle with cheese, place in the oven.

    Bake 30-35 minutes until the cheese is golden and bubbly or until the quinoa on top is golden and crispy.

    It was amazing!

    definitely will make it again. A must try for first timers. I also cut some bread into strips and toasted then under the grill and used them to eat it with.
