    Default Spring / summer recipes

    Ok this really hot humid weather has got me thinking about meal planning for the hotter months. Looking for inspiration!

    I'm making spicy citrus chicken with a summer salad, YUM

    chicken
    Lemon, lime & orange juice + zest
    Garlic
    Chilli
    & olive oil to marinate

    For salad I think I'm doing like a salsa.

    Lettuce, tomato, red onion, avo, corn etc

    I love a cous cous salad in summer. Basically cous cous with baby spinach, tomato, avo, Spanish onion and feta with some sort of chicken. I like tandoori chicken on top... Mmmm now I want that for dinner.

    We also mix whole egg mayo with natural yogurt for a yummy sauce on any salad. About a. 1:3 ratio of mayo to yogurt
