    I actually never put white sauce in my lasagne and it is amazing! I do however use meat sauce though. And a mixture of cheeses in layers.

    I do mince, grated zucchini, grated carrot, diced onion, diced garlic, basil, rosemary & chives.

    Sweet potato chips are big at our place! Just cut them into chip pieces and bake in the oven. Very yummy! And if we want a burger, we often make our own. Use wholemeal or multi grain rolls. I make my own patties just using lean mince, herbs for seasoning, onion and an egg to bind it all together then salad of your choice. Tastes good and is a better alternative to a normal burger and chips!

    Another one we enjoy is sweet potato nachos. Instead of corn chips, I bake half a sweet potato, top with turkey mince cooked with cumin, tumeric and onion and low fat sour cream (just a dollop, you don't need much) and mushed avocado. Also very nice!

    A lot of changes DH and I made were little things like replacing white rice with brown, only eating wholemeal bread, using wholemeal flour etc. I also have a great healthier alternative for a banana cake which tastes great! I'll try find it and post it.

    A really yummy salad (to serve with some "Mexican-ish") or to use as a chunky dip... or on top of pita chips with cheese already grilled on them for fresh, zesty nachos...

    Diced tomatoes
    Corn Kernals
    Diced red onion
    Chopped coriander
    juice of 1/2 a lime
    tsp olive oil
    Mashed avocado with some lime juice

    Mix everything but the avo together. Dollop the mashed avo on top.

    ...

    Sliced mushrooms
    Baby Spinach
    Snow Peas
    peeled green prawns
    Garlic
    Olive Oil
    Brown Rice or wholemeal pasta

    Pop some olive oil and garlic in a pan, add prawns and mushrooms. Add snowpeas. Add baby spinach. Serve over brown rice or wholemeal pasta(lazy dinner).
