Thread revival! I made a batch of meatballs (beef & zucchini with a pasata sauce that had beans & capsicum & garlic - it's what I had in the fridge). Served with mashed sweet potato.
This is my last batch cook for a while, I'm going to be trying to run down my freezer and cupboard as we just sold our house (eek!) and will be moving in a couple of weeks. So I'm going to be racking my brain for creative ways to use it all up!

Approx 2 skinless/ boneless salmon fillets either minced or just blitzed in food processor - then add a tablespoon of Dijon mustard, chopped fresh chives, a big squeeze of lemon juice, black pepper, a tablespoon of chia seeds, an egg and then bread crumbs ( as much as you need to thicken it up as the mixture will be quite wet)
Then put onto puff pastry sheets and roll into required size like you would a normal sausage roll, brush with egg wash and I top with chia or sesame seeds and bake in 180 oven for approx 25 mins or until golden brown!
