    I kind of change it every time and there are heaps of variations if you google salmon & sweet potato patties.

    I use steamed & mashed sweet potato, chives if I have them or French shallot or a small bit of red onion, grated zucchini, tin of salmon pieces (the one in water), blitzed piece of wholegrain bread and an egg. The breadcrumbs are just for the outside to give them kind of a crust. Pan fry with just a couple of drops of olive oil.

    I usually do a batch and freeze them (before pan frying) in pairs for a quick easy lunch option.

    Roast chicken with roast and steamed veg. DS ate all but the zucchini then had seconds of chicken, carrots and peas and a huge bowl of yogurt. DD ate half a bite of potato and half a bite of green bean there's something up with her, she's sleeping terribly too.

    DS had a spinach and feta filo from Zaraffas (bit like Gloria Jeans but better and not as common yet). When we were ordering a guy who was standing near by commented that he'd never seen a young boy who was so enthusiastic about having spinach for dinner lol. I love that after all the fussiness we dealt with when he was little that he will now eat most things.
