Meat and vege is interchangeable with what you have in the fridge.
If you wanna make your own shortcrust pastry you will need:
2 cups plain flour
150g chilled butter
2tbs cold water
1 egg yolk.
Flour and butter in food processor until it resembles fine bread crumbs.
Add water and yolk.
Process just until the dough comes together and then knead on a floured surface. Wrap in cling wrap and put in fridge for 30 mins.
If not, just buy frozen.
A knob of butter
Shortcut rindless bacon- I put 6-8 slices
1/2 cup grated tasty cheese
1/2 cup milk
Veggie of choice (in this case broccoli)
Sauté leek and bacon in the knob of butter until the leek is soft, set a side to cool a little.
Chuck everything else together in a bowl, mix and add bacon/leek.
Grease cupcake tins, I used one of those silver egg things you use when poaching eggs, to cut the pastry to fit the cupcake tins.
Spoon in filling.
Bake in preheated 180C degree for 30mins or so until quiches start to brown.
They freeze well.
