    Spinach, ricotta and fetta roll using puff pastry. I made 2, one fed all 3 of us tonight and I'll freeze the other. Served with and salad.

    It was actually pretty easy. I used:

    A French shallot (or just use red onion)
    Bunch of spinach/silverbeet
    Garlic
    Ricotta
    Fetta (ratio of about 1:3 fetta & ricotta, or whatever you prefer)
    One egg
    Teaspoon of lemon rind

    Cook the onion or French shallot in olive oil until soft, add chopped spinach to the pan and stir until the spinach shrinks down. Set aside to cool (I put straight into the fridge).

    Mix the cooled spinach with the cheeses, an egg, lemon rind, season with salt & pepper (I just used a little pepper and no salt as DD was having some).

    You can do small rolls but I used a whole sheet and did 2 big rolls with lots of filling. Sprayed with olive oil and sprinkled with sesame seeds.

    I baked them for about 30min on 180C then turned the oven up to 220 for 10min as the pastry was taking ages to cook. Next time I'll probably put it on 200C the whole time and see how that goes. You might need to experiment with your oven.

    It was really nice! DD ate the pastry but refused to eat anything else. I think she was a bit tired and not very hungry, so I expect she'll eat it next time given that she generally loves things with spinach filling.

    DD's dinner tonight - BBQ chicken + salsa (capsicum, mango, red onion, baby spinach, lemon juice & pepper.
    We're having the same salsa later with garfish and I'm SO looking forward to it.

    Porcupine meatballs, fresh corn cob, purple carrots, pumpkin, sweet potato, brocoli, mashed potato and normal carrots!

    E.T.A -and he ate every single scrap of food on his plate. A bigger meal than myself and DH. So totally screwed when he is a teenager!!!
