How do you make those tomato tarts?? Yum!
I didn't take a pic as I was trying to contain the mess, but DD had a "fajita" - a multigrain tortilla, beef strips, crushed tomato, capsicum, red onion, kidney beans, paprika with a touch of fresh line juice. All wrapped up. She loved it but dear god the MESS!!
It's easy but a lot of prep! Makes about 16
I use 3 punnets of cherry tomatoes - cut in half and place skin side up on a baking tray and roast in a very low oven for about 2 hours with a drizzle of good olive oil and caramalised balsamic - then get a block of parmesan cheese and using a veggie peeler peel thin slices , chop some fresh basil and cut either store bought puff pastry ( I did this tonight but you can also do with a homemade short crust pastry) into your required sizes - then just assemble on a lined baking tray -
put cheese slices on first ( leave a 1cm border) then place cherry tomatoes on , then sprinkle basil over and a splash of good olive oil, bake until pastry is golden approx 15 mins - if your a meat eater you can put thin slices of prosciutto on top as well - they are great for parties , you can assemble them earlier in the day and cook when needed!
