    Homemade sausage rolls with heaps of veggies hidden inside

    Beef stroganoff and rice for dinner, it's one of DDs favourites (mine too!). She ate about half which is pretty good considering today has been all over the place with eating & sleeping due to her being unwell.

    Super easy!!
    1 small carrot, 1 small zucchini, half an apple, handful of spinach, half an onion, all finely grated or chopped as small as possible
    250g beef mince, 1 egg, 1 clove of garlic crushed, tablespoon of soy sauce
    Moosh it all together (ds1 loves helping with this part!) spread a decent handful of the mixture across one side of puff pastry, roll and cut into lengths of about 3-4 cm.     Why have I never seen these??? I think tellfresh were 1/2 price last week. Must keep an eye out for another sale and stock up. Thanks

    A fine mess lunch... Tuna/corn and mayo spread on wholemeal english muffin, some grated cheese and again, baby corn spears. She really likes them
