Line a pie dish with puff pastry, than add mashed roast pumpkin. In a separate in dish mix ricotta, spinach (i use the frozen stuff), eggs and some grated cheese. Pour on top of pumpkin and cook in a moderate oven.
I sometimes make them in a muffin tray and leave out the spinach.

DS1's morning tea...this thread made me paranoid I wasn't offering enough mid-morning! Usually it was one piece of fruit.
Will be interesting to see if he eats his lunch today!

DH surprised me with a new oven yesterday (our old one was crap and I alway complained about it) so today I made bacon, zucchini, corn and cheese muffins for lunch. They were yum!!
DD is sick so only picked at it, but I'll try to save her some for when she's better.
Caught on camera! DD throwing her bowl of pumpkin off her tray. Today for lunch I gave her roasted pumpkin and, for the first time, baby corn spears- she seemed to like the corn spears, she at least ate a tiny bit before mashing them in her fist. I ended up mixing her uneaten pumpkin with cream cheese and served it spread on cruskets.. At least she still gets her vegies in her, lol.

This is a standard lunch that DS takes to school.
I try to think of the food groups:
Box 1 - carbs (sandwich with wholemeal bread, avo with ham today but often it's just vegemite)
Box 2 - fruit (he usually has this for morning tea)
Box 3 - veggies (options - cucumber, carrot, left over cord cob, tomato, snow peas
Box 4- protein/dairy - cheese cubes, 1/2 boiled egg, cabana pieces with a few bits of dried fruit
He also gets a yoghurt.
