    A salsa of roasted capsicum, avocado & sweet corn - with a dressing of olive oil, lime juice, coriander, salt, pepper. Yummy as a side with grilled chicken or fish!

    Roast field mushroom!
    I sprinkle them with salt, pepper, paprika, dried oregano and little cubes of real butter! Delicious!!!!!
    Roast them for about 10 mins at 180. (Depending on the size of the mushroom)

    Also ratatouille is great. Any veg like zucchini, capsicum, leek etc and a few tins of tomatoes.....add garlic, herbs and anything you have really! It freezes really well too. Taste.com has great recipes for this. Last time I made it I mixed baby spinach leaves in right before serving so they wilted and it was delicious.

    I also love mixing fried bacon and onion with cooked spinach. You can make up a little cooked sauce of olive oil, garlic, salt and paprika to drizzle over.

    That's all I can think of now. This thread has me inspired! Yesterday I made minestrone and gingerbread men .... I might keep the culinary ball rolling!
    Ps wish I had a thermomix tho hahaha
