    I was given a recipe for chicken & feta rissoles we have them with veggies, yummo.

    500g chicken mince
    1 zucchini grated
    1 carrot grated
    1 small finely diced onion
    1 egg
    1 tsp Dijon mustard
    Oregano, salt & pepper to taste
    A handful of feta crumbled

    Just mix together, roll into balls and fry in a non-stick pan.

    I frequently just throw a bunch of different veges and some meat in my cast iron pot with a can of tomatoes, some stock and a few herbs and spices, throw it in the oven then serve the stew/casserole over mash or cauliflower rice.

    Omelettes are great for nights when you want something quick and easy. You can put anything in them. Chicken, baby spinach, tomato, mushrooms, feta, bacon etc

    I made cottage pie tonight. So easy, just google a recipe.

    I put mashed sweet potato on top rather than regular potato, yum.

    My main issue is making things with too many carbs - too much pasta and potato in my diet haha
