    Chicken velouté meal


    Ingredients
    1 garlic clove
    80g brown onion (about 1 onion), halved
    30g olive oil
    500g water
    1 tbsp TM vegetable stock concentrate
    220g leeks (about 2 leeks), white part only, roughly chopped
    370g nadine potatoes (about 3 potatoes), roughly chopped
    180g zucchini (about 1 zucchini), sliced with a peeler into tagliatelle
    340g carrots (about 2 carrots), sliced with a peeler into tagliatelle
    8 chicken tenderloins (about 400g)
    1 sprig fresh tarragon
    sea salt, to taste
    freshly ground black pepper, to taste
    1½ tbsp crème fraîche
    2 tsp Dijon mustard
    Method
    Place garlic and onion into mixing bowl and chop 3 sec/speed 7.
    Add oil and sauté 3 min/Varoma/speed 1.
    Add water and stock to mixing bowl. Place leeks and potatoes into TM basket and insert basket into position.
    Place chicken onto Varoma tray, top with tarragon and season. Place Varoma into position and steam
    17-20 min/Varoma/speed 3.
    Add vegetable tagliatelle to Varoma dish, reposition tray and steam for a further 5 min/Varoma/speed 1, or until chicken is cooked through.
    Place tagliatelle vegetables and the chicken pieces into ThermoServer to keep warm.
    Transfer leeks and potatoes into mixing bowl with the water and stock, season and pureé 1 min/speed 9, gradually increasing speed from speed 1 to speed 9.
    Transfer almost all of the soup into a ThermoServer or large bowl, leaving just enough soup to cover the bend in the blades. To make the sauce, add crème fraîche and mustard to mixing bowl and blend
    10 sec/speed 3.
    Serve soup first, followed by the chicken with vegetable tagliatelle, topped with sauce.
    Variation
    Add a small tomato and 20-30g deseeded capsicum to the TM basket in step 2 with the potato and leek for a mixed vegetable soup and to add a slightly different flavour to your sauce. You will have to reduce the amount of leek and potato to allow all vegetables to sit comfortably in the basket without obstructing the hole in the mixing bowl lid.
    General tip
    The balance of flavours in the soup requires both the leek and potato quantities to be as per the recipe above. Overloading with potato will result in an overly starchy soup and will hinder the velvety consistency.

    I hosted a demo this month and got the round Thermoserver free then was able to buy the oval one for $40.
