    Default Savoury vege muffins - amazing!!!

    Just thought i would share...we made these last night and they are so good!!! I found the recipe on the heart foundation website and was surprised how delicious they are. Budget friendly too! Great for lunch boxes or snacks and a good way to hide veges from fussy eaters

    Ingredients
    1/2 cup grated cheese
    2 cups SR Flour
    1/2 cup creamed corn
    1 egg
    1/4 cup olive oil
    3/4 cup milk
    1 grated carrot
    1/2 grated zuchinni
    1/2 cup very finely diced pumpkin
    1/2 cup finely cut broccoli
    1 clove garlic
    Salt and pepper to taste
    * you can use any type of veges you want this is just what we had left in the fridge, the carrot and zucchini make them nice and moist

    Method
    - preheat oven to 170 degrees fan forced
    - fry garlic, add pumpkin and broccoli and cook until almost soft.
    - sift flour into a bowl, add all the veges and cheese
    - in a seperate bowl whisk together oil, corn, milk and egg and then add to flour. Season with salt and pepper
    - mix all ingredients until just combined
    - place mixture in greased muffin tray
    - cook 25 - 30 mins till light golden

    Serve with butter or sour cream or whatever you like

    Yup they freeze perfectly! We put half the batch in the freezer for next week, they also last in the fridge for about two days
