    Baked spuds

    with a dollop of butter wrapped in foil then chuck in the oven

    Once cooked we usually top with ham, cheese , pineapple and sour cream!

    Toasted sandwiches

    Our faves....

    - baked beans or spaghetti with cheese
    - ham cheese avo and pineapple
    - ham and tomato
    - Turkey, cream cheese and cranberry sauce

    Chicken baked spuds!
    Use left over chicken chopped/shredded, cook some bacon if you have some then mix a cup of soup cream of chicken flavour n pour into pan with chicken n bacon simmer until hot add a dollop of cream or sour cream n thicken if need be with cornflour. Serve over baked spuds (which I microwave then just check in oven for 10 mins) we add things like cheese, spring onion, avocado, Demi sundries toms pretty much anything you can scrounge up! It's also good on pasta or rice

    Stir fry - put rice on - chop veggies ( carrot, broccoli, bok choy, brown onion) grate garlic ginger and chilli in wok with peanut oil , throw in meat if any, throw in veggies with glug of soy , Hoi sin sauce and veggie stock , stir fry for 3 minutes - chuck in loads of coriander serve with rice ( should take 15 mins from start to finish)

    Fish tacos - stir fry cubed white fish with cumin, coriander root, garlic and chili and capsicum strips in olive oil , for 4 minutes, squeeze over lemon juice and chopped coriander serve with taco shells or burritos with shredded cheese, lettuce, tomato and a fresh guacamole ( scoop out 1 avocado, squeeze lemon, dash sweet chili sauce and mix - takes less than 2 minutes) the whole dish takes less than 15 minutes

    Pesto pasta - boil pasta - put basil, garlic, parmesan cheese and pine nuts in food processor with olive oil - toss over fresh pasta - serve with salad and grilled fish or steak if you want to bulk it up

    Any grilled fish ( or steak ) and steamed veggies takes 15 minutes

    This is what ds gets when I am in a mad rush..

    Cheesy risoni with veg

    Cook risoni as per packet instructions
    Steam zucchini, carrot and asparagus
    Mix veg in with drained risoni
    Add a smidge of butter
    Sprinkle through a handful of a cheese

    It takes 10 mins and is so easy as I almost always have all the ingredients in the house.

    Also..

    Salmon and rice noodles

    Cook rice noodles as per packet instructions
    Steam broccoli and asparagus
    Marinate salmon in soy sauce and honey
    Grill until cooked through
    Combine salmon, veg and noodles together with the remaining marinade from the salmon.

    .. DS loves this and it takes 10 mins easy.

    Grilled Chicken Burgers.. By the time you fry or grill the chicken, you can have the rolls ready with whatever salad you like. So super quick, but yum! I sometimes crumb them too.. An extra 5 mins, but a schnitty is always great!

    A great one for kids- left over rice, baked beans, cheese on top, mini tomatoes diced and mixed through.

    Fried rice: left over rice, diced bacon, frozen peas and corn, soy sauce, sesame oil.

    Spaghetti.

    Pasta- pasta boiling, veggies steaming on top, once cooked add to pot, add sauce, top with cheese.

    Puff pastry, pizza or rolled up like scrolls,

    2 min noodles, with a egg cooked on both sides, peas and corn and a little greatest cheese.

    Toasted sandwiches.

    Tuna bake.

    Anything with rice or pasta. Keep some mince and chicken breast in the freezer and get those jar sauces and mix with rice or pasta. Beef stroganoff in the slow cooker, Indian and papudams, spaghetti bolognese, pasta bake....or, frozen fish and chips with salad, hamburgers, chicken burgers, home made pizzas
